Y’all. This is a favorite in our house in the wintertime!! I’ve made it for a couple seasons now, and it is perfect. Sweet potatoes are also a major staple around here so I put them in as many things as possible! Lol! It’s so easy, and you can totally double this recipe and have it in the fridge for leftovers for the week. It heats up well!

1lb ground beef
salt, to taste
1 cup onion, chopped
3 cloves garlic, crushed
10 oz can of diced tomatoes
8 oz can tomato sauce
1 can of black beans
3/4 cup water
1 tsp cumin, or to taste
1 tbsp chili powder
1 tsp paprika
1 large sweet potato, peeled and diced
fresh cilantro and lime, for garnish
Optional Garnish: avocado
In a large pot, brown beef over medium-high heat, breaking it up as it cooks into smaller pieces and season with salt and cumin.
When meat is browned and cooked through add onion and garlic; cook 3 minutes over medium heat.
Add the can of tomatoes, sweet potato, tomato sauce, water, cumin, chili powder, paprika, salt.
Cover and simmer over medium-low heat until potatoes are soft and cooked through, about 25 minutes stirring occasionally.
Add 1/4 cup more water if needed. SERVE!
