My Aunt Kim was so special to me. I know there aren’t a ton of aunt-niece relationships that are super close, but we were. Her, me, my mom and grandma were inseparable when I was little. Kim passed away of cancer when I was 10, and it was a tragedy. This cookie recipe was found in a folder and I’ve never made it before 2019. They are THE BEST!!!
Easy, Chewy. Perfect.
| Makes about 24 cookies

1/2 cup Unsalted Butter
1/2 cup peanut butter
1/2 cup cane sugar
3/4 cup brown sugar
1 egg
1 1/4 cup all purpose four
1/2 tsp baking powder
3/4 tsp baking soda
a pinch of salt
Preheat your oven to 375 degrees F.
Whisk together your butter (room temp), peanut butter, sugars and egg in a bowl until butter is smooth and everything is incorporated.
Fold in your flour, powders & salt.
Chill dough for 1 hour or overnight.
line a baking sheet with parchment paper.
Make 1×1 inch balls of dough and place them an inch or two apart on your baking sheet.
criss cross the tops with a fork (optional!)
sprinkle a little sugar on each cookie
bake for 10 minutes on 375 degrees F.
