The key to a great chia seed pudding is toppings, in my opinion. This healthy, nutrient rich, protein packed snack or breakfast is delish. The best part? Make it ahead and pop them out of the fridge when you are craving something sweet!

6 TBSP of Chia Seeds
1 1/3 Cups of Almond Milk (I love the coconut Almond blend by Califa Farms)
3 TBSP of Matcha Collagen Powder (I use Vital Proteins, but you can sub regular matcha powder. Just half the amount!)
3 Tbsp Blueberry Jam
Blueberries to taste
Optional but recommended: Coconut Flakes, Chocolate chips or cocoa nibs & a drizzle of Honey
First, grab a bowl and mix up your chia seeds, milk & matcha.
Let this mixture sit in the fridge overnight or for a few hours.
Grab tiny bowls or cups to begin assembling your pudding.
Put the pudding mixture (should be thick and gooey), into your cups first. Then your jam. Then your blueberries!
Now go crazy with the rest of the toppings! You can cover the tops with foil and store in the fridge for the week.
