1 Cup of cubed butternut squash
A handful of Baby tomatoes, cut in half
3-4 TBSP of Gorgonzola Cheese
1/3 cup of chopped thick cut ham
2 cups of chopped romaine lettuce
8 TBSP olive oil
4 TBSP balsamic vinegar
1 tbsp honey
3 cloves of Garlic, minced
Salt and pepper to taste
salads are short and simple! These ingredients can be purchased in larger quantities and be used multiple times throughout the week. So, I am just going to start the directions by telling you how I prep everything and keep it all in my fridge for easy salads for the week!
First, pop your chopped butternut squash in the oven on 420 for 20 minutes.
Wash all your produce and chop your lettuce. I keep it in a bowl in a fridge and grab it when I make this salad!
Chop your thick cut ham into blocks. Set aside.
Chop your tomatoes and slice your avocado. Set aside
In a small bowl, mix together all of your dressing ingredients with a fork.
Take your squash out of the oven and mix all of your salad ingredients together in a bowl. Pour your dressing over and enjoy!
