Okay. These cookies are incredible! I have been making variations of them for years, and they are so versatile! My FAV way is with chocolate chips, though.
These easily vegan cookies are so delicious and taste chewy, yet crumbly and are honestly my perfect cookie! Free of refined sugars, and SO GOOD. Don’t let ‘vegan’ or ‘gluten-free’ scare you. This recipe is a WIN for all!

1/2 tsp baking soda
1/2 tsp of salt
2 cups vegan semi-sweet chocolate chips (There are so many great brands out there!)
3 tbsp of maple syrup
3 tbsp of pure honey (Sub for 3 tbsp MORE of maple syrup if vegan)
1/2 cup of vegan butter (you can also use ghee or regular butter here if you are not vegan!)
1 tbsp of vanilla extract
Preheat your oven to 350 degrees F.
Line a baking sheet with parchment paper.
Put all of your wet ingredients in a sauce pan and melt over medium heat. While that is melting together over low heat, mix your dry ingredients in a large bowl.
When your wet ingredients are all melted together, pour them into your dry ingredients and mix. This should be fairly easy to do with a spatula.
Once that is done, roll small pieces of cookie dough into balls and place them on your cookie sheet. I love using an ice cream scoop for this part! It is way less messy. Press each dough ball down with a fork.
Place your baking sheet in the oven on 12-15 minutes. Let cool completely and enjoy!
